16 lady fingers
2 cups espresso
2 cups mascarpone cheese
½ cup sugar or Splenda for baking
2 oz. cocoa liqueur
Cocoa powder for dusting
 
1.       Pour espresso into small shallow, flat bottomed dish.
2.       Dip lady fingers quickly on each side into espresso. Immediately place in martini glass.
3.       Mix together mascarpone cheese with sugar and cocoa liqueur in separate bowl.
4.       Place dollop of cheese mixture over lady fingers.
5.       Dust with cocoa powder.
 
These can be made a few hours in advance.
